What's canned pumpkin like? I have a recipe (pumpkin cheesecake) which calls for canned pumpkin, and I have a pumpkin. It is a pumpkin intended for eating. In the absence of any other information I'm just going to cook it in a little water in the microwave till it's soft, but should it be sweetened or spiced in any way? The recipe calls for sugar, cinnamon and nutmeg in addition to the canned pumpkin.
